Happy Birthday Annie

My dear friend Annie's Birthday was Sunday, September 13th. We had a birthday celebration at Henna's house. We asked her who she wanted to invite and it was a small group: me, Ken, Larry, Henna, Margie and Nick Giordono, Jackie and Bobbie and Annie. We were planning on the girls going out for lattes and shopping in the AM, but Annie wasn't feeling up to it. She just had surgery on both of her eyes. She has a rare type of glaucoma that causes blindness. They found it in time and she should be fine. Her father went blind from the same condition.

I made a white chocolate raspberry cake per her request. It turned out pretty good...but not exactly as it was supposed to. The icing would not get thick enough so I couldn't put icing on the sides. I quickly put it together and stuck it in the refrigerator, hoping it would harden. 20 minutes later I looked in the 'fridge and the top two layers had slid off and were leaning against the apple juice!! I told Ken, we need to get to Henna's now so I can put it in her large freezer. I carefully carried it down to the car, one thumb on the left side of layer 2, the other thumb on the right side of layer 1. I was a nervous wreck on the way to Henna's. It all worked out, we made it and put it in her freezer.
I also made homemade pizza... a great recipe on epicurious: Flatbread with Sausage, Bell Peppers, and Asiago...very delicious!

We had a great time and Annie did too!
